Guacamole is a great way to eat healthy fats, minerals and vitamins to boost energy and the immune system. Mash 2-3 ripe avocados, 1 medium tomato, 1/2 chopped red onion, 1 seeded and finely diced green chilli, and a small handful of coriander leaves with plenty of lime juice and seasoning.
