THAT SUNDAY CHICKEN Once you’ve welcomed a good roast chicken with gravy to your Sunday table, this recipe will become your new best friend! Serves ◆ 100 ml balsamic vinegar◆ 30 ml brown sugar◆ 2 whole star anise pods◆ 10 large tomatoes◆ 12 strips Parma ham or streaky bacon◆ 45 ml olive oil salt and freshly ground black pepper◆ 150 g buffalo mozzarella◆ 1 handful fresh basil Place vinegar, sugar and star aniseed in a medium casserole. Serves 6 ◆ 12 slices store-bought white bread◆ 115 g (125 ml) softened butter◆ 180 ml peach chutney◆ 200 g Cheddar, coarsely grated◆ 2 tomatoes, sliced◆ salt and white pepper◆ 1 onion, sliced into rings and separated◆ 6 slices ham◆ 6 kebab skewers◆ tomato sauce, to serve Spread butter on all 12 slices of bread, then spread 15 ml chutney each on 6 of the slices.
