Every Sunday is Pancake Day in the Kendrick household. My wife makes them for the kids’ breakfast, smothered in chocolate hazelnut spread or maple syrup. They wolf down four each until the batter runs out. But on Shrove Tuesday itself, it’s my turn to do the flipping – and the butterscotch banana pancakes recipe on this page is the one I’ve got my eye on. What toppings do you prefer? Quick tandoori chicken This is such a great dish to cook in the oven or on a barbecue. The marinade is textbook tandoori and the acids from the lemon and yogurt mean that it’s ready to go within minutes of being prepped. It’s even better if you prep it and leave it covered in the fridge for a day or two before cooking. EASY TRIFLE ■ For an easy dessert, line a trifle dish with slices of sponge or ginger cake, then spoon over defrosted frozen forest fruits with some of the juices. DON’T WASTE THOSE LEEK TOPS Leek tops may be a bit tougher than the lighter part, but we promise that they have more flavour! Crispy leeks ■ Slice the leek tops as finely as you can. Heat a good 1cm oil in a wok or frying pan until shimmering. Sizzle the leek in batches for 2-3 mins until crispy, then scoop out with a slotted spoon onto kitchen paper and season with salt. 5 ways to use ‘em up SPICED BANANA & HONEY FRENCH TOAST ■ Tip 3 tbsp honey, ½ tsp ground cinnamon and ¼ tsp ground cardamom into a pan. Bring to a bubble, then toss in 2 bananas, peeled and thickly sliced. Cook for 2 mins, then remove from the heat. Beat 1 large egg with 300ml whole milk.
