3 great twists on turkey
Turkey tom kha gai

50g flat rice noodles 400ml can half-fat coconut milk 300ml chicken stock small chunk of ginger, sliced 1 lemongrass stalk, woody outer leaves discarded, chopped 1 red chilli, sliced 200g cooked turkey, sliced 50g mangetout, shredded 1 lime, juiced 1 tsp brown sugar 1 tbsp fish sauce handful of coriander leaves 1 Cook the noodles following pack instructions, then drain and rinse with cold water. 2 Bring the coconut milk and stock to a simmer in a pan, then add the ginger, lemongrass and half the chilli.
