1 Preheat oven to 180C/Gas 4. 2 Melt 20g butter in a heavy-based saucepan and cook 250g trimmed, sliced leeks over a low heat for 5 min. Measure out 200ml cider. Add a good dash to leeks, cover pan and cook over a low heat for a further 5 min. 3 Melt 40g butter in a saucepan and stir in 40g plain flour.
