Looking at populations of people living in villages in Italy, researchers examined markers in DNA and identified a gene called PDSS2, which could affect caffeine metabolism. They then compared 1,200 people in Italy with 1,731 people in the Netherlands on their coffee habits and found that people with higher levels of PDSS2 reported drinking less coffee. The theory is that people with higher levels of this gene metabolise the caffeine slower, so need less coffee to get their ‘hit’. *…
