The festive season is here, but not like any other we have experienced. Blackened salmon burger • 2 St Pierre Brioche Burger Buns• 2 salmon fillets• 1-2 tbsp butter, melted• 1-2 tsp Cajun spice mix• 1 red pepper, finely diced• 1 yellow pepper, finely diced• 1 tomato, finely diced• 2 spring onions, finely chopped• Ground black pepper• 1 lime, juice• Sriracha mayonnaise (or chilli flavoured)• ½ cucumber, finely sliced Method (serves 2) 1. VAST BEACH AT LOW TIDE Because bays are often gently sloping, a small drop in the tide will expose a large area of sand and the ‘intertidal’ zone is often hundreds of metres deep – perfect for galloping horses or racing land yachts. RAPIDLY RISING TIDE The shallow gradient of a bay means a small vertical rise in the tide will flood a large area of beach much faster than on a steeply sloping beach. To avoid being cut off by a rapidly rising tide, time your adventure for the ‘ebb’ when the tide is going out. I start each day with a walk with my border collie, Skye. Heading along the peninsula towards Cardross, we stop at Ardmore Point, which is rugged and green, a little gem of a bay with an old wooden jetty. In summer, I pick everything from Japanese wild rose petals to lemon thyme and bee pollen. Gin-free ‘G&T’ recipe SERVES 4-6 • 3 cardamom pods (optional)• ¼ cucumber, ribboned• 1 small bunch fresh mint, torn• 1 strip orange zest• ½ orange, juiced• ½ lemon, juiced• 50g pomegranate• 1 litre soda water• 2 large handfuls ice METHOD 1. Add 100ml boiling water to a large jug. 2. Add the cardamom (if using, plus cucumber, half of the fresh mint, orange zest, orange juice and lemon juice. Allow it to infuse until the water has cooled (roughly 5-8 mins). 3. Add the ice to the jug, then pour over the soda water slowly (so the bubbles don’t disappear). 4. My single best memory in nature this year was on the rugged coast path at Porthtowan on the north coast of Cornwall. The light was perfect, there were 50 or so surfers in the sea, the surf was crashing against the rocks and it felt like an absolutely perfect British coastal moment. There are so many underrated secret beauty spots along the Cornish coast path and the light has a slightly different tonal effect, perhaps because the county is surrounded by sea. I’m interested in the extremes of life and I’m lucky to jet around the world, but when lockdown began I found being stuck at home quite difficult. One of my favourite coastlines is the bay – but only at low tide. This is when the bay environment comes into its element, a vast expanse of sand in all directions. The reason this happens is because the bathymetry (seabed/depth) of a bay is generally gently sloping, so a small drop in the tide makes the water go a long way out. You may have noticed this at your local bay, and wondered why it is so different to the beach around the corner where the tide seems minuscule by comparison.
