SHAKSHUKA
YOU WILL NEED:
■ 400g large ripe tomatoes (or 1 can)■100g cherry tomatoes, halved■ 1 medium onion, diced■ 2 cloves garlic, sliced■ 1 tbsp olive oil■ 2 sprigs fresh thyme■ 3 tbsp balsamic vinegar + more to taste■ 2 bay leaves■ 1 tbsp tomato paste■ 1 tsp smoked paprika■ 1 pinch chilli Grant says: “This egg and tomato classic makes a hearty breakfast served with fresh or grilled bread.
