We have to repeat protein so often, chicken or fish, so making this salmon spicy is to wake them up. They probably had this two days ago, so we have to make it different. I was lucky at this Tour de France because everyone liked spicy food. This blackened salmon is one of the dishes they love. It makes riders want to eat, which is the big reason I’m at the Tour. So many times you see the same hotel food: plain rice, plain chicken, plain pasta. This dish helps me give them lots of flavours in the same dish.
