40g ancho chillies, stems removed (available from herbies.com.au)2 red chillies, roughly chopped3 onions, peeled, 1 roughly chopped, 2 quartered10 garlic cloves, peeled1½ tbs each ground cumin and cinnamon45g tomato paste120ml olive oil6-7kg whole turkey

500g green beans, trimmed, halved500g runner beans, trimmed, halved on the diagonal12 garlic cloves, peeled1 green chilli, skin pierced a few times120ml olive oil2 onions, peeled, finely chopped1 cup (250ml) vegetable or chicken stock2 tsp lemon zest, plus 45ml juice10g each tarragon, dill and parsley leaves, roughly chopped35g preserved lemon skin, julienned
