How on earth did we get here and where did the year go?! It is with a whisper of disbelief that I sit here writing about our Christmas issue. And yet here we are and, like you I imagine, I couldn’t be happier to welcome the festive season, to switch focus from the incessant intrusion of global news, and to turn instead to celebration with friends and family. As dish grows its presence in the Australian market, with distribution into Coles, Woolworths and Ritchies supermarkets, it seemed timely to nip across the ditch and help spread the word. Luckily for me, I secured a gorgeous room at Sydney’s Paradox hotel. From 1st July this year, the Radisson Blu was renamed and rebranded, and while the name might be new, the building itself has a long and rich history. Incredibly, this stylish five-star hotel is just the third tenant in the iconic building that began life as the Fairfax headquarters. From 1856, and for the next 100 years, The Sydney Morning Herald was created and printed on-site, before being sold and transformed into a Westpac bank and offices for a further 50 years. My grandmother had a rule that we couldn’t open presents until we’d eaten breakfast. Marinated Feta and Olives (v) 2 x 200-gram blocks Mainland Creamy Feta Cheese1 cup pitted green manzanilla olives4 cloves garlic1 cup olive oil1 small lemon1 teaspoon dried oregano¼–½ teaspoon chilli flakes TO SERVE 2 tablespoons chopped fresh parsley, optionalcrusty bread Cut the Mainland Feta Cheese into 2cm cubes. Place in a medium-sized bowl or container. Cut the olives in half and smash the garlic cloves with the back of a knife. Add both to the bowl along with the olive oil. Homemade Muesli This is the muesli I make on repeat for our family, it’s packed with oats, nuts and seeds and lightly spiced with cinnamon. Spring is renowned for rustling up wild weather, and so it was on the night guests gathered at Atelier restaurant in mid-September.
