Peaches, strawberries, plums, nectarines, mangoes… Summer is here! For me, the best time to eat fruit is at breakfast, when my brain is still too groggy to think about bacon and eggs, a chocolate croissant or a cheesy omelette.
You can keep things simple with a banana and some yoghurt, or a handful of berries in your smoothie, but you’ll probably still be dreaming of pork sausages. To banish all thoughts of a fry-up, you have to do a bit more. For a healthy (and delicious) breakfast, I like to pulse fresh fruit in a food processor until I have a thick sauce. I’ll store the sauce in the fridge and use it with pap, flapjacks and yoghurt, instead of honey or jam. Yum!
