#ON TREND Step 1: Cut two of the bamboo poles to the height you want the ladder to be. Trim away any side shoots. Step 2: Cut the remaining bamboo pole into a series of smaller lengths (4–5 pieces at 0.5m or less). This is the width of your ladder. New Zealanders consume on average 18-20 kilos of bananas per person every year. Collectively that amounts to a staggering 81,000 metric tonnes of the yellow goodness. The banana is the world’s most heavily traded fruit, with more than $25 billion spent on them around the globe annually. But just how much do we know about the journey our bananas take from farm to fruit bowl? And what, or more importantly who, are we supporting with our purchases? The 1960s was a memorable decade. Labelled the ‘Swinging Sixties’, in reference to the relaxation of taboos relating to race and sex, it was a revolt against social norms. It also marked the first moon landing, and the arrival of the humble, invasive plastic bag. The melodic call of a bellbird stops me in my tracks. I glance up to see if it really is a bellbird and it hops obligingly into view on a nearby branch. A little further down the path, three saddleback appear and I stand transfixed. These birds are on the Department of Conservation’s ‘At Risk – Recovering’ list, and are also a delight to see. This parade of native birds I enjoy on Fishermans Track at Tawharanui Regional Park is a tribute to the hard work of Tawharanui Open Sanctuary Society and Department of Conservation. Mexican Pancakes Pancakes are a winner on a Sunday morning, and these have a kick! Spice up the standard with traditional flavours and add a surprise with chilli chocolate sauce. For kids, tone down the spice or omit altogether. Pancakes Cashew Cream Chilli Chocolate Sauce Start by soaking the cashews for the cashew cream. They need around 3 hours to soften, or you can speed up the process by soaking in hot water. Drain and rinse the cashews, then add to a high-powered blender with other cashew-cream ingredients and whizz until silky smooth. Place in the fridge to set. Next, make the chilli chocolate sauce. This juice is so easy to make and delicious on a hot day. Hydrating coconut water is the base of the drink, but the rock-star ingredient is pineapple: the tropical yellow fruit contains vitamin C, manganese, fibre and bromelain (a protein-digesting enzyme). In a bit of multi-tasking magic, you can also turn this juice into iceblocks (see page 89). It took me a long time to like sprouts. Although I eat them voluntarily as an adult, I can’t help but wonder if I was brainwashed when I was a child – every time I see sprouts, I hear my mother’s voice urging me to eat them. I do the same to my kids these days, of course, but they are far too free-thinking. Sprouting seeds or beans involves soaking them long enough for germination to occur. This process allows all the beneficial enzymes, vitamins and amino acids to become more readily available, in concentrated quantities. When you eat a sprout, you are essentially consuming the entire plant and getting all the benefits of that plant. It is estimated there are up to 100 times more beneficial enzymes in sprouts…

The “conflict of coexistence” – this phrase has come to encapsulate our tenuous relationship with wilderness and wildlife. In Sri Lanka, this conflict often proves fatal: each year, many humans and elephants die in the struggle over limited resources for human settlement, crop plantations and elephant habitat. Today the island nation of Sri Lanka has an elephant population of around 3000–4000, nearly half of what it was 60 years ago. Sri Lankans have always revered the elephant, giving it pride of place in traditional festivals and ceremonies. Economically, the nation benefits from tourists coming to see the visible wild-elephant population. Yet where crops are grown near remote forests or elephant territory, lives are marked by violence. Elephants raid crops and people drive them away with gunshots, drums and electric fences.…

New Zealanders send 700,000 tonnes of organic waste to landfill each year. This is the single largest component of municipal solid waste, and once in landfill, it quickly decomposes and produces methane, an environmentally harmful greenhouse gas at least 21 times more potent than carbon dioxide. Landfills are the third-largest source of methane in the world, so having a compost system at home and/or a food waste disposer will help reduce your carbon footprint. Modern wastewater treatment plants throughout New Zealand (where food from your waste disposer goes) capture methane gas generated during processing and convert it to renewable energy in the form of heat and electricity.
