STANDING ON THE BOAT DOCK, I STARED ACROSS THE GREAT SALT LAKE, its mirrored surface the same gunmetal gray as the Utah sky. THERE’S AN OLD saying among dog trainers: You need birds to train bird dogs. It’s true. But most of you probably don’t have a flock of homing pigeons or penned quail at your disposal. I get that. So, what follows are tips on training with birds—and, when you don’t have them, training without. INTRODUCING BIRDS First, let’s talk about introducing puppies to what they’ve been bred for: pointing birds. Typically, I introduce them to a planted pigeon at three or four months of age, although I’ve introduced them as young as seven weeks. Here’s how I do it. PROBLEM I would like your opinion on correcting hard-mouth. I have a five-year-old English pointer that started out as a natural retriever. Two years ago, she started being a little rougher with the birds she was retrieving. Last year, it got worse. Needless to say, I need to correct it. Two things have contributed to her developing this problem. Number one is I exclusively hunt pheasants, which I know can contribute to dogs developing this problem. Number two is my shooting regressed the last few years to where I am not getting clean kills, resulting in a lot of cripples that I am  sure are fighting with her. Swan has a bad reputation when it comes to table fare, but if you cook it right, it can be downright delicious. Adult birds are old, and have winged their way up and down the flyway for many seasons. This means they can be tough. The best way to cook them is a long, slow braise in a flavorful liquid. Green chili is one of my favorite preparations because it’s easy to prepare, with most of the cooking hands-off as the meat simmers away on the stovetop, getting more tender and tasty along the way. CRATE-TRAINING IS important for obvious reasons with a puppy. You want him to understand whether he’s at home, or in the truck heading down the road, that he has his place to be. Not only is this convenient for you as the pup’s owner, but it’s also a great way to keep him safe. Teaching the kennel command to a youngster is easy enough, and at first should happen at home. But before you start, remember that the idea is to not only get the dog to understand what you’re telling him, but also to create a positive association with his crate.
