Pork and apple burgers Pork and apple is a winning combination. Avoid using egg in the patty as it tends to make the texture rubbery. Makes 6 burgers • 600g pork mince (ask your butcher for fresh mince)• 1 knob ginger, peeled and finely grated• 1 red chilli, seeded and finely chopped• a handful of flat-leaf parsley, finely chopped• 1 large baby marrow, grated• 1 small green apple, finely grated• 60ml finely chopped onion• 250ml oat bran Mix all the ingredients together and season with salt and pepper. There always seemed to be a bunch of people joining us for supper – visitors or family from abroad, visiting missionaries, old family friends, my father’s work associates, or young people my folks took an interest in. Often, it was just a matter of us setting a few more places for a family supper. But there were also parties and celebrations. This perennial is wind-resistant, at its happiest near the sea, and also an excellent, long-lasting cut flower. It is at its most impressive when in flower from June right through winter into summer. At the coast, plant sea lavender in full sun and in hot inland regions, plant it in semi-shade. It likes well-drained or even sandy soil and can survive with little water, especially at the coast. 1 Shade gardening Instead of seeing shade as a problem, think of it as a welcome escape from the hot summer sun and an opportunity to grow shade-loving plants. Clivias brighten shady spots in the garden, not only in spring when C. miniata flowers, but also in autumn with the green-tipped pendant flowers of C. gardenii. Plectranthus grow in dappled or light shade, with many flowering in autumn. Some grow as shrubs with white, pink or purple spur-like flowers (P. fruticosis, P. ecklonii); others are useful groundcovers for moist soil (P. ciliatus, P. oertendahlii ). Q: Some of my roses, which include ‘Mister Lincoln’, ‘Duet’, ‘Queen Elizabeth’ and ‘Stephanie di Monaco’, are prone to having thin stems, even though I feed them with Vigorosa. This is a result of too much shade, not enough water or because the soil, initially, was not prepared deep enough. The varieties you mentioned are vigorous and strong-stemmed. Light pruning could also be a factor but then they usually come out with thick basal stems, which need to be trimmed back when they are about knee-height. I recently had a built-in cupboard made for my new house. When I received the designer’s plans, I saw that provision had been made for a drawer that could be as securely locked as Fort Knox. Chipotle braai sauce Add extra zing to chicken wings (or pork chops or riblets) with this braai sauce. Because of its high sugar content, it’s a good idea to first braai or cook the meat and then coat it generously with the sauce to glaze it.
