After visiting the pretty coastal town of Deal a few years ago, Jo Lavender and Rob Newland fell in love with the idea of a home by the sea. They’d stayed at The Rose, a local pub recently renovated by interior designer Michelle Kelly, and liked what they saw. SERVES 4 READY IN 25 MINS INGREDIENTS • 200g chestnut mushrooms • 1 garlic clove • 2tbsp olive oil • 3 eggs and 2 egg yolks • 45g finely grated vegetarian smoked cheese • 45g finely grated vegetarian Pecorino, plus extra to serve • 300g fresh tagliatelle • Fresh thyme, to serve 1 Dry-fry the mushrooms in a pan for 7-8 mins to release all their water.
