Pistachio macaron ice-cream sarnies Makes 8-10 * 1 x 500ml tub of good vanilla or pistachio ice cream FOR THE MACARONS * 50g ground almonds * 30g pistachio nuts * 120g icing sugar * 60g egg whites * 36g caster sugar * green food colouring paste * Transfer your ice cream from the freezer to the refrigerator and leave for 15 minutes to soften. Line a deep 20cm square baking tin with greaseproof paper. Once spoonable, spoon the ice cream into the tin and spread until level – it should be 4-5cm thick. Put into the freezer.
