When I got back I wanted to do something unique with it, because it’s an unappreciated ingredient here in the States—like calamari was 30 years ago,” he says. The octopus appetizer is served with fingerling potatoes that are first steamed, then smoked, and cherry tomatoes that are dried in-house until they resemble sweet, concentrated raisins. La Bazenne, Naples Le duo de canard, paired with 2012 Domaine du Tariquet Gros Manseng When it comes to the art of pairing food and wine, restaurant owner Giacometti’s awakening occurred at Il Vino, the Paris restaurant run by world-famous sommelier Enrico Bernardo, where diners first choose their wines and then have a menu created to match it. “It was an amazing experience,” he recalls, “and opened my eyes to the joys of food and wine pairing.” The duo of duck served at La Bazenne is a traditional dish from southwestern France. The breast is seared, then sliced and served rare in the form of a steak; the leg confit is cooked slowly in its own fat to seal in the juices. Greg Scarlatos Fuse Global Cuisine, Naples Tart-cherry-glazed lamb rack, paired with 2011 Shafer Vineyards Cabernet Sauvignon Chef Scarlatos describes this dish as being full of “complementary contrasts,” in keeping with his eclectic menu. “The opposing ends of the dish don’t fight with each other, but blend harmoniously.” He uses Colorado lamb, which lacks the gaminess of the New Zealand or Australian variety and has a more buttery taste. Ridgway Bar & Grill, Naples Braised short ribs with puréed parsnips, paired with Stag’s Leap Hands of Time Red Blend Chef Tony Ridgway has become known for many dishes during his decades in Naples, but his comfort food has won the hearts of local diners. While short ribs are usually fatty, at Ridgway’s restaurant all the fat is trimmed off. The chef says the short ribs are braised for three hours in red wine, herbs and spices, served with a buttered parsnip mash and drizzled with a rosemary demi-glaze. The finished dish is consistent with Ridgway’s philosophy of sourcing the best possible ingredients and preparing them as simply as possible. Local opera aficionados have reason to cheer along with Opera Naples, now celebrating its tenth anniversary season. The homegrown company has a new center with space to put on operatic productions. Located in the Davis Triangle Redevelopment Zone in East Naples, the David and Cecile Wang Opera Center is the first of its kind in Southwest Florida, devoted to musical performances as well as education. The 286-seat theater will host operatic performances, rehearsals and recitals, and will be available for use by other cultural organizations.
