If you are a regular reader of my letters (thank you), you’ll know that I am a long-time resident of Naples. My family and I have seen the changes and growth that our town has experienced over 20-plus years. Aside from the obvious draw of beautiful beaches, our vibrant community and strong projected job growth have attracted new families and new neighbors. My street, and probably yours, doesn’t look quite the same as it did when we first moved in. But change can be good. Change brings new businesses, new restaurants, and cultural activities that we can all embrace and enjoy. Collier Family Farms, Naples (239-207-5231, collierfamilyfarms.com), located in Ave Maria, grows an array of organic produce, including citrus fruits, blueberries, and watermelon along with a variety of vegetables, such as leafy greens, peppers, and potatoes. After its summer hiatus, Collier Family Farms expects to reopen in late October to offer tours. You can also find its homegrown organic produce at the Third Street South Farmers Market on Saturdays during season. CHEF BRYAN SUTTON Chef Bryan Sutton’s culinary awakening began with his grandmother, a native of Sheffield, Alabama, who taught him classic Southern recipes. In lieu of cooking school, at age 14 he began working his way up in restaurant kitchens. “I wanted to save up money to buy a car,” he says with a laugh. After serving as sous chef at the original Campiello in Eden Prairie, Minnesota, he moved to Florida to help open the restaurant’s Naples branch. He later opened his own dining establishment, Tropical Reef, which closed in 2008. He took the helm as executive chef of Veranda E at the Hotel Escalante in Naples last year. Sutton’s focus on organic, healthy, and sustainably sourced ingredients is in part influenced by his dramatic personal transformation during 2008…

“Our philosophy is giving while living,” says Tim Ubben, who along with his wife, Sharon, concentrates considerable donations on a limited number of nonprofits, so they remain meaningfully engaged in each one. “It’s very satisfying to actually see the benefits we may have brought to an organization, as opposed to a bequest, which is giving when you’re six feet under.” The couple, originally from Glencoe, Illinois, became seasonal residents of Naples in 2000, but had been vacationing in the area since 1985. Like many, Jeffrey Binder fell in love with Naples during his first visit. While starring in The God Game at Gulfshore Playhouse, Binder and his partner, Michael Anderson, liked the town so much, they bought a home in Naples Park. The accomplished actor has appeared in The Lion King, Mary Poppins, and Side Man on Broadway and on TV in Damages and Law and Order, among many other roles. Binder joins the Playhouse this month as artistic associate. He will assist Kristen Coury, producing artistic director, to conceive, develop, and maintain the theater’s creative and artistic standards. Drink up. If you wait until you’re thirsty to reach for the water bottle, you’re already dehydrated, which stresses the body, including the brain. So how much is enough? “Take your body weight, divide it in half, and that’s how many ounces of water—not coffee or juice—you should drink a day,” says Dr. Pamela Hughes, who operates the Hughes Center for Functional Medicine in Naples.
