Salmon En Croute
SERVES 4-6 PREP & COOK 1 HOUR
1 small onion, finely chopped 1 clove garlic, crushed 150g baby spinach leaves ⅔ cup spreadable cream cheese 2 tbsp sour cream 2 tsp Dijon mustard 1½ tbsp chopped fresh dill, plus extra sprigs to garnish 4 x 200g skinless salmon fillets 4 sheets frozen puff pastry, just thawed 1 egg, lightly beaten Mixed salad leaves, lemon wedges, to serve 1 Heat a lightly oiled, large frying pan over medium-high heat. Add onion. Cook, stirring, for 3-5 mins, until soft. Stir in garlic. Add spinach. Cook, stirring, until just wilted.
2 Stir in cream cheese, sour cream, mustard and dill until well combined. Season with salt and pepper. Cool.
