It’s a miracle Queensland groom Simon is alive. The Ipswich lad, 39, almost lost his life several times after being diagnosed as epileptic in his early 20s, and undergoing dangerous experimental brain surgery. ‘When I had my surgery, there were five people in the ward and the only person that walked out alive was me,’ he tells New Idea. Cranberry Muesli Loaf Serves 8, Prep 20 mins, Cook 1 hour 410g can pear slices in juice ½ cup vegetable oil 2 eggs, lightly beaten 2/3 cup brown sugar, firmly packed 2 cups wholemeal self-raising flour ½ cup reduced-sugar dried cranberries 1 cup muesli Butter, to serve (optional) 1 Grease a 12cm x 22cm medium loaf pan.
