Italian Lamb Cutlets with Potato Salad
Serves 4, Prep 20 mins, Cook 10 mins
800g washed red potatoes,quartered
8 lamb cutlets (600g), trimmed
¼ cup Italian herbs stir-in paste
200g green beans, trimmed
180g tub char-grilled & marinated capsicum strips, drained
¼ cup chopped fresh parsley
Lemon wedges, to serve
DRESSING
2 tblsps olive oil
1 tblsp red wine vinegar
2 tsps wholegrain mustard
Salt and pepper, to taste
1 Place potatoes and 2 tblsps water in a large, microwave-safe dish. Cover. Cook on high (100 per cent), stirring halfway through, for about 12 minutes or until tender. Drain. Transfer to a bowl.
