Raspberry Ripple Cake Serves 12, Prep 10 mins, Cook 40 mins 1 cup frozen raspberries (110g) 300g unsalted butter, chopped, at room temperature 1 cup caster sugar 4 eggs, at room temperature ¼ cup milk 2 cups self-raising flour Pink food colouring, to tint Extra ½ cup frozen raspberries Icing sugar mixture, to decorate 1 Grease a 19cm x 30cm lamington pan. Q Eighteen months ago I moved back to the rural area where I studied pottery with my aunt as a child. Since I have returned, I’ve had that old itch to work with clay, but given I have a job and a family – both of which I love dearly, I think I would be spreading myself too thin if I were to throw myself back into pottery. Bring to boil. Transfer to a heatproof bowl. Refrigerate, covered until cold. 2 Combine apples, syrup and half the cinnamon sugar in a bowl.
