Lamb Madras Stir-Fry
Serves 4, Prep and Cook: 20 mins
500g lean lamb leg steaks, thinly sliced 1 onion, halved, thickly sliced 2 tblsps vegetable oil 2 tblsps madras curry paste 2 tblsps tomato paste 200g green beans, trimmed, halved 250g punnet cherry tomatoes, halved 2 tsps brown sugar 1 cup loosely-packed fresh basil leaves 2 x 250g packets microwaveable brown basmati rice Greek yoghurt, to serve 1 Toss lamb with onion and half the oil in a large bowl.
2 Heat an oiled, large, non-stick wok over a high heat. Add lamb and onion in two batches. Stir-fry, for about 2 to 3 minutes, or until lamb is browned. Remove.
