Buk Choy Slaw with Satay Dressing Serves 4, Prep: 15 mins 1 bunch buk choy (350g) 2 cups thinly shredded red cabbage (180g) 2 cups shredded carrot (150g) 2 green spring onions, thinly sliced 1 cup chopped fresh coriander 2 tblsps sesame seeds, toasted SATAY DRESSING ½ cup Kewpie mayonnaise 2 tblsps crunchy peanut butter 1 tblsp soy sauce 2 tblsps lemon juice 1 tsp caster sugar 1 To make dressing, place all ingredients in a medium jug.
