Marshmallow Choc-Nut Fudge Makes 24 bars, Prep and Cook: 25 mins 280g packet pink and white marshmallows 100g unsalted butter, chopped 200g block dark cooking chocolate, finely chopped 2 tsps vanilla extract ½ cup chopped macadamias ½ cup chopped natural almonds 1 Grease and line a 20cm square cake pan with baking paper, extending paper 5cm above pan edges. 2 Combine marshmallows, butter and 1 tblsp water in a medium saucepan over a medium heat. Stir until marshmallows are melted. Remove pan from heat. 3 Add chocolate and vanilla. Stir until melted and combined. Using a wooden spoon, stir in nuts. Pour into prepared pan. Spread evenly. Refrigerate overnight, or until firm. 4 To serve, lift fudge from pan. Cut into bars. TIP Any nuts can be used in this…

Pineapple Punch Popsicles Makes 12, Prep: 10 mins 450g can crushed pineapple in syrup 1½ cups tropical punch fruit drink (See Tip) 1¼ cups coconut water ¼ cup fresh passionfruit pulp ²/ ³ cup finely chopped fresh strawberries 1 Drain pineapple, reserving ¾ cup of the syrup. 2 Combine reserved syrup, fruit drink, coconut water and passionfruit in a large jug. Stir in pineapple and strawberries. 3 Pour into 12 star-shaped popsicle moulds (100ml-capacity). Insert the popsicle mould lids fitted with built-in sticks. Vegiful Fried Noodles Serves 4, Prep and Cook: 20 mins 3 x 85g packets oriental- flavoured 2-Minute noodles 1 cup frozen green peas 2 tblsps vegetable oil 2 carrots, peeled, shredded 1 red capsicum, cut into thin strips ½ bunch bok choy, finely sliced crossways 3 green spring onions, thinly sliced diagonally ¼ cup teriyaki sauce ¹/³ cup unsalted roasted cashews, coarsely chopped 1 Break noodle cakes into large pieces. Add noodles, contents of flavour sachets and peas to a large saucepan of boiling water. Boil for 2 minutes. Drain. 2 Heat oil in a large, non-stick wok over a medium to high heat.
