Poached Cherries Serves 4, Prep and Cook: 45 mins 1 vanilla bean 1 cup caster sugar 500g fresh cherries, pitted 1 tblsp lemon juice 1 Using a small, sharp knife, cut vanilla bean in half lengthways. Scrape out seeds. Place seeds and bean in a›large saucepan with sugar and 1 cup of water. 2 Stir over a low heat until sugar is dissolved. Bring to boil.
