Beetroot and Nectarine Salad with Herbed Dijon Dressing Serves 4, Prep and Cook: 20 mins ¹/ ³ cup walnuts 120g pkt mixed salad leaves 250g punnet whole fresh beetroot, cut into wedges 2 nectarines, cut into wedges ½ x 250g tub marinated feta, drained DRESSING 2 tblsps extra-virgin olive oil 2 tblsps Dijon mustard 1 tblsp white wine vinegar 3 tsps honey 1 small clove garlic, crushed 2 tblsps finely chopped fresh coriander leaves 1 Place walnuts on an oven tray. Cook in a moderate oven (180C) for about 5 minutes, or until lightly browned. Remove. Cool on tray. 2 Meanwhile, to make dressing, combine all ingredients in a small jug with 2 tsps water.
