Plum Cobbler Serves 6, Prep and Cook: 50 mins 1kg ripe medium plums ¹/ ³ cup caster sugar Vanilla ice-cream, to serve TOPPING 1¼ cups self-raising flour 1 tsp ground cinnamon ¹/ ³ cup firmly packed brown sugar 100g cold unsalted butter, finely chopped ¹/ ³ cup milk 1 Cut plums into six wedges. Remove and discard stones. Place plums in an 8-cup capacity ovenproof dish with sugar and 1 tblsp water. Toss to combine. Cover dish tightly with foil. 2 Cook in a moderate oven (180C) for about 15 minutes, or until plums start to soften. Baileys Crème Brûlée Serves 6, Prep and Cook: 55 mins 2 x 300ml cartons pure cream ¼ cup milk ¹/³ cup Baileys Irish Cream 2 tsps vanilla bean paste 6 egg yolks ²/³ cup caster sugar 1 Place six 1-cup capacity (10cm diameter) ovenproof dishes in a large roasting pan. 2 Combine cream, milk, liqueur and vanilla in a medium saucepan.
