Cherry Syrup Nut Brie

½ cup caster sugar 2 tblsps honey 2 tsps apple cider vinegar 2 sprigs fresh thyme, plus extra to garnish 150g fresh cherries, pitted, halved 2 tblsps pistachios 2 tblsps natural sliced almonds, toasted 450g round brie, chilled Assorted crackers, to serve 1 Combine sugar with ¼ cup water, honey, vinegar and thyme in a medium saucepan (base measures 15cm). Stir over a low heat, without boiling, until sugar is dissolved. Bring to boil. Boil, without stirring, for about 7 minutes, or until mixture coats the back of a metal spoon and is the consistency of warm honey. Remove pan from heat. Discard thyme.
