We are now well into 2022, but I’m still holding strong onto the New Year’s resolutions I set out for myself at the start of the year – particularly the goal to be smarter with money. Rockmelon and Pineapple with Ginger Lime Syrup Serves 4-6, Prep and Cook 30 mins 1 large lime 2 tblsps caster sugar 2cm piece fresh ginger, peeled, sliced 2 lemon and ginger tea bags ½ rockmelon (800g), peeled, seeds removed ½ pineapple (600g), peeled, core removed Fresh mint leaves, to decorate 1 Using a vegetable peeler, cut a 5cm strip of rind from lime. Cut lime in half. Squeeze to extract juice. You will need 3 tsps juice. 2 Place 1 cup water, sugar, ginger and rind in a small saucepan over a medium heat. Stir until sugar is dissolved. Chicken and Rocket Wraps Makes 4, Prep 15 mins 3 cups (450g) shredded roast chicken meat ¼ cup finely chopped fresh chives ¼ cup pepitas, toasted, chopped ½ cup whole egg mayonnaise ¹/ ³ cup tomato chutney, plus extra to serve 8 slices Swiss cheese 1 bunch rocket, trimmed 4 Lebanese bread 1 Combine chicken, chives, pepitas and mayonnaise in a large bowl. Season with salt and pepper. 2 Spread chutney evenly over bread. Place chicken mixture down the centre. Top with cheese and rocket. Chocolate Mousse Shots with Raspberry Puree Makes 16, Prep 45 mins 200g block dark cooking chocolate, broken into pieces 2 eggs, separated 2 x 300ml tubs thickened cream 1 tblsp icing sugar mixture 1 tsp vanilla extract Dark chocolate curls, to decorate RASPBERRY PUREE 1½ cups (250g) frozen raspberries, thawed ¼ cup icing sugar mixture 1 Place chocolate in a heatproof bowl.
