A giant new portrait of King Charles was unveiled at Buckingham Palace last week. However, the artwork, by renowned British portraitist Jonathan Yeo, has elicited a mixed response. “It looks as if he’s in hell” one unimpressed person commented online. Another stated “the harshness of the red doesn’t match the softness of his expression.” Jonathan has painted Charles in the uniform of the Welsh Guards. Potato Bake SERVES 8-10 AS AN ACCOMPANIMENT PREP & COOK 1 HOUR 45 MINS ■ 2kg washed Desiree or Pontiac potatoes, unpeeled ■ 600ml thickened cream ■ 3 cloves garlic, finely chopped ■ 1 tblsp fresh thyme leaves 1 Preheat the oven to 180C. Slice the potatoes very thinly, using a sharp knife or a mandolin. 2 Combine the cream, garlic and thyme in a large bowl. Season with salt and pepper. Chicken and Chorizo Traybake with Tomatoes SERVES 4-6 PREP & COOK 1 HOUR ■ 8 chicken cutlets, skin-on (1.6kg), excess skin removed, skin scored ■ 200g chilli chorizo, coarsely chopped ■ ⅓ cup chicken stock ■ 400g can diced tomato ■ 320g punnet Mix-A-Mato Tomatoes ■ 6 sprigs fresh thyme, plus extra to serve ■ Crusty bread and lemon wedges, to serve 1 Place chicken, skin-side up, in a large ovenproof dish. Pumpkin, Pesto and Spinach Tarts SERVES 12 PREP & COOK 50 MINS ■ 650g butternut pumpkin, peeled, cut into 2cm pieces ■ ½ cup basil pesto ■ 3 sheets frozen puff pastry, thawed ■ 3 eggs ■ ¾ cup sour cream ■ 60g bag baby spinach 1 Lightly grease a 12-hole muffin pan (⅓-cup capacity). 2 Boil or microwave pumpkin until just tender. Drain well. Cool slightly. Toss with half the pesto. 3 Cut the pastry sheets into square quarters. Press a square into each prepared pan hole. 4 Whisk eggs and sour cream in a jug until combined.
