Pumpkin, Thyme and Caramelised Onion Pizza SERVES 4 PREP & COOK 30 MINS ■ 500g packet diced butternut pumpkin ■ 1 tsp dried thyme leaves ■ 2 x 27cm round pizza bases ■ 1 cup roasted red capsicum (150g), thickly sliced ■ 200g tub bocconcini, drained, torn ■ ½ cup caramelised onion 1 Heat an oiled, large, non-stick frying pan over a medium to high heat.
