Peach Whisky Iced Tea SERVES 2 PREP 10 MINS ■ ½ orange, sliced ■ ¼ cup fresh mint leaves, bruised, plus extra leaves to garnish ■ ¼ cup Scotch whisky ■ ¹⁄³ cup peach iced tea cordial ■ 1½ cups ice cubes ■ 300ml bottle dry ginger ale, chilled 1 Divide orange slices and mint leaves between two tall glass tumblers. 2 Pour whisky and cordial into a small jug. Stir to combine. 3 Just before serving, place ¾ cup of the ice cubes into each tumbler. Divide whisky mixture over ice. Top with ginger ale. Stir to combine. 4 Garnish well with extra mint sprigs. Tropical Sparkling Punch MAKES 3½ LITRES PREP 15 MINS • 2 limes • 250g punnet strawberries, hulled • 560g can lychees, drained • 750ml bottle prosecco, chilled • 3 cups pineapple juice, chilled • 1.25L bottle lemonade, chilled • 1 cup vodka PASSIONFRUIT ICE CUBES • ½ cup fresh passionfruit pulp (about 4 passionfruit) • 1 cup pineapple juice 1 To make ice cubes, combine passionfruit pulp with pineapple juice in a medium jug. Pour evenly into 2 x 14-hole ice cube trays. Freeze. 2 Carefully cut the limes and strawberries into thin slices. Drain the lychees. Place in three separate bowls.
