My family is big on caravanning, and January is our time to shine. Every year, Mum and Dad head to South Australia’s Yorke Peninsula for some R&R in their van, and this year I’m excited to be joining them with some friends. In the early hours of December 31 2019, Ronnie Ayliffe stood in her home, north of Cobargo, and watched a deep red glow on the horizon. Cherry Lime Tart SERVES 8 PREP 35 MINS ■ 250g packet Granita biscuits ■ 100g unsalted butter, melted ■ 400g fresh cherries ■ Whipped cream, to serve FILLING ■ 500g cream cheese, chopped ■ 395g can sweetened condensed milk ■ 3 tsps finely grated lime rind ■ 2 tblsps lime juice ■ 1 tsp vanilla extract 1 Grease a 24cm round loose-base flan tin. 2 Process biscuits in a food processor until finely crushed.
