The father of murdered Queensland teenager, Jack Beasley, will jet off to the UK this week in the hopes tougher action can be taken on knife crime. Jack was just 17 when he was stabbed in the heart while enjoying a night out with friends in Surfers Paradise in December 2019. The attack was random, unprovoked and senseless. Five teenagers, then aged 15 to 18, were charged. Since his death, Jack’s parents, Brett and Belinda, have fought tirelessly for change. Chicken Banh Mi Salad SERVES 4 PREP 15 MINS ■ 440g packet shelf-fresh rice noodles ■ 2 cups (300g) shredded roast chicken meat ■ ¹ ⁄³ cup bottled Vietnamese salad dressing ■ 1 tbsp soy sauce ■ 1 large Lebanese cucumber ■ 1 large carrot, peeled, thinly shredded ■ 2 cups shredded iceberg lettuce ■ 100g packet crunchy fried noodles ■ ¹⁄³ cup fresh coriander leaves ■ 3 green onions, thinly sliced ■ Kewpie mayonnaise and sliced long red chilli, to serve 1 Place rice noodles in a large heatproof bowl. KitKat Fudge SERVES 36 PREP & COOK 35 MINS ■ 2 x 160g blocks KitKat Milk Chocolate ■ 395g can sweetened condensed milk ■ 50g butter, chopped ■ 2 tbsp golden syrup ■ 290g packet Milk Choc Melts 1 Grease a 20cm square cake pan. Line base and sides with paper, extending baking paper 2cm above pan edges. 2 Cut KitKat into fingers. Reserve and set aside 18 fingers. Finely chop remaining fingers. 3 Place condensed milk, butter and syrup in a large saucepan. Stir over a medium-low heat until butter is melted. Increase heat to medium-high.
