Key Lime Marshmallow Parfaits SERVES 6 PREP 25 MINS ■ ½ x 250g packet Nice biscuits ■ ½ cup shredded coconut, toasted, plus extra to decorate ■ 50g butter, melted ■ 395g can sweetened condensed milk ■ ½ cup lime juice ■ 125g (1½ cups) white marshmallows, chopped ■ 300ml tub thickened cream ■ 1 tbsp icing sugar mixture ■ Thin lime wedges, to decorate 1 Process biscuits in a food processor until finely crushed.
