Rosemary & Antipasti Wreath SERVES 6–8 PREP 30 MINS ■ 15 small sprigs of rosemary (10-12cm each) ■ 100g sliced prosciutto, cut into thirds lengthways ■ 2 x 120g tubs sweet baby bell peppers with cream cheese ■ 135g tub semi-dried tomatoes, drained ■ 100g tasty cheese, cut into 1.5cm cubes ■ 100g Red Leicester cheese, cut into 1.5cm cubes ■ 15 pitted green olives ■ 15 pickled baby cucumbers 1 Set aside rosemary sprigs. 10-Minute Chilli Zucchini Spaghetti SERVES 2 PREP & COOK 10 MINS ■ 200g thin spaghetti ■ 1 large clove garlic, crushed ■ ½ tsp dried chilli flakes ■ 250g packet zucchini spaghetti (see tip) ■ ¼ cup shredded parmesan, plus extra to serve ■ Lemon wedges, to serve 1 Cook pasta in a large saucepan of boiling, salted water for about 8 mins, or until just tender. Drain, reserving ¼ cup of the cooking water. 2 Meanwhile, heat an oiled, large, deep frying pan over a medium-high heat. Add garlic, chilli and zucchini. Sumac Pumpkin with Tahini Sauce and Herb Crumble SERVES 6 PREP & COOK 1 HOUR ■ 3 x 800g butternut pumpkin halves, seeds removed ■ 2 tbsp olive oil ■ 2 tbsp ground sumac ■ 1 tbsp honey, warmed TAHINI SAUCE ■ 1½ cups Greek-style yoghurt ■ 2 tbsp tahini ■ 2 tbsp lemon juice HERB CRUMBLE ■ 2 green onions, thinly sliced ■ ¼ cup thinly sliced fresh mint leaves ■ 2 tbsp finely chopped fresh parsley ■ 2 tsp finely shredded lemon rind 1 Cut each pumpkin half lengthways into four wedges. 2 Combine oil and sumac in a small bowl. The last time Sharon McKell saw her daughter Emma Pawelski alive, they were celebrating Emma’s 30th birthday. It was October 17, 2005. Raspberry-Topped Pistachio Cheesecake SERVES 10-12 PREP & COOK 40 MINS ■ 1½ x 250g packets Nice biscuits ■ 180g butter, melted FILLING ■ 3 tsp powdered gelatine ■ 2 x 250g blocks cream cheese, chopped ■ ¾ cup caster sugar ■ 180g jar (7 tbsp) smooth pistachio spread ■ ¹⁄³ cup sour cream ■ 300ml tub thickened cream, whipped TOPPING ■ 2½ cups (300g) frozen raspberries ■ ²⁄³ cup caster sugar ■ 2 tbsp lemon juice ■ 1½ tbsp cornflour 1 Invert base of a 24cm springform pan (base measuring 23cm). HOW TO DISSOLVE GELATINE Powdered gelatine is easy to use and ideal for setting chilled desserts. When adding dissolved gelatine to another mixture, make sure both are about the same temperature. Don’t add hot gelatine mixture to cold milk or cream as it will suddenly set and form lumps. Always allow the gelatine mixture to cool slightly first. 1 Sprinkle the gelatine powder over cold tap water in a small, heatproof jug or bowl. Stir with a fork. The mixture will become thick. 2 Sit jug in a saucepan of barely simmering water. Stir until gelatine is dissolved in the water.
