Brioche French Toast with Raspberry Sauce SERVES 6 PREP & COOK 22 MINS ■ 400g unsliced brioche loaf ■ 4 eggs ■ ½ cup milk ■ 2 tbsp caster sugar ■ 1 tsp ground cinnamon ■ 50g butter ■ Vanilla ice-cream, to serve RASPBERRY SAUCE ■ 2 cups frozen raspberries, thawed ■ ¼ cup caster sugar 1 SAUCE Place all ingredients in a saucepan over a medium heat. Stir until sugar is dissolved. Bring to a simmer. Transfer to a small bowl. Cool. 2 Trim ends off brioche loaf. Cut into six 3cm-thick slices. 3 Place eggs, milk, sugar and cinnamon in a large bowl. As a baby, Gabriella ‘Ella’ Belan never cried or made a sound. Tropicana Pavlova SERVES 12 PREP & COOK 2 HOURS ■ 6 egg whites ■ 1½ cups caster sugar ■ 1½ tsp white vinegar ■ 300ml tub thickened cream ■ ½ cup sour cream ■ 2 tbsp icing sugar mixture ■ Chopped pineapple, sliced kiwifruit, sliced mango, passionfruit pulp, to decorate 1 Grease a large oven tray. 2 Trace a 22cm-diameter circle onto a sheet of baking paper.
