1. Apricot, Pistachio & Cardamom Squares
In food processor, pulse 3 cups raw shelled pistachios until finely chopped. Remove 1 cup nuts; set aside. Add 2 cups dried apricots, 11/4 cups cashew butter, 2/3 cup chia seeds, 1/2 cup honey, 2 tsp vanilla, and 1 tsp each cardamom and cinnamon to processor; pulse until smooth. Sprinkle half of the cup of reserved nuts into 9" x 9" parchment-lined pan. Press apricot mix into pan, then add remaining pistachios on top. Let stand until firm, about 1 hour. Cut into 30 squares.
