DATE FRUIT PIE
TOTAL TIME: 25 minutes + chilling time
In food processor at high speed, blend 11/2 cups walnuts, 1 cup pitted dates, 1/2 cup shredded coconut, 1 tsp vanilla extract, and 1/2 tsp cinnamon until paste forms. Press into tart pan and chill. Arrange 1/2 cup each blackberries, blueberries, sliced strawberries, sliced kiwifruit, and/or sliced mango on top of crust. Chill 1 hour. Serves 8.
