Maple Syrup 101
The later the sap comes out of the tree, the more robust the syrup will be—syrup that is darker will have stronger maple flavor. But if a label says “pancake syrup,” leave it on the shelf, as that means it’s made mainly from corn syrup, colorings, flavorings, and preservatives. Real maple syrup has only that one ingredient.

Whisk together 1 cup unsweetened rice milk, 1 tsp each maple syrup and pure vanilla, and ¼ tsp ground cinnamon. Serve over ice and sprinkle with extra cinnamon.
