Chive and Goat Cheese Scones Yield: 24 scones Preparation: 15 minutes Bake: 10 to 11 minutes 2¾ cups gluten-free all-purpose flour* 1 tablespoon sugar 4 teaspoons baking powder ½ teaspoon salt 1 cup crumbled goat cheese ¼ cup chopped fresh chives 1¼ cup cold heavy cream 2 large eggs, divided • Preheat oven to 425°. • Line a baking sheet with parchment paper. Mother’s Day has taken on an entirely diffecrent meaning for me since my mother passed away almost six years ago. I cannot really explain why I have chosen mother’s Day to honor her. It is sort of ironic, but Then again not really. You see, she was not really The tea-going type. She was a lovely lady with a good attitude and a wonderful sense of humor. Those who knew her would say she never met a stranger. She was a very gracious hostess when she did entertain and always made everyone feel welcome.
