Dotonbori Imai, opened in 1946, has continued to support Kansai’s Konamon culture as an udon restaurant well-known for their carefully created dashi (Japanese soup stock), attracting tourists as well as many celebrities. The shop’s biggest feature is of course the dashi. In places like Kyoto, while located in the same Kansai region as Osaka, dashi is made from katsuo (skipjack tuna). However, in Osaka dashi is usually made from kombu kelp. At restaurant Imai, dashi is made from combining saba (mackerel) and urume (round herring) from Kyushu region, in addition to kombu kelp. Imai only uses natural kombu kelp from Kurokuchihama, Hokkaido. Imai has its own special methods, such as using an abundance of kombu kelp, much more than the amount udon shops normally use, to make their dashi. Imai…

Established in 1979, Takohachi created a masterpiece using carefully selected ingredients and tools, with its founder’s hope to “make takoyaki that one craves even when feeling tired.” Dipping the fresh, suppin (bare, naked) takoyaki into the shop’s special dashi, one can fully taste the mild, gentle flavor of the combination of shoyu and dashi. The shop uses octopus from South Africa, which is softer than Japanese ones, making it more suited for takoyaki. The shop also uses first-grade wheat flour, which is used for products like high-quality milk bread, and blends different kinds of wheat using their own ratio. But a wealth of unique canned goods can be found in grocery stores around the world that reflect the food culture of each country and its people. Japan is no exception. Japan, however, has long lagged European countries and the United States in its awareness about services for disabilities. This awareness has been slowly improving over the past few years, thanks to the efforts of activists, the accomplishments of the athletes in the 2020 Paralympic Games in Tokyo, and popular TV shows that feature characters with disabilities played by well-known actors. Also drawing more attention to disabilities in Japan is adaptive fashion, which is seen more frequently on social media. Junko Koshino, whose sisters Hiroko and Michiko are also acclaimed fashion designers, recounts that, aside from the influence of their mother, a dressmaker living in Kishiwada, Osaka had a large significance on her and her sisters when growing up. Kishiwada, Osaka is home to the most famous Danjiri Matsuri in Japan. Danjiri Matsuri is a Japanese cart-pulling festival, where large wooden carts (danjiri guruma) are designed to resemble shrines and temples.
