BIRCHER MUESLI Serves 2
Grate one pink lady apple, and combine with 40g of rolled oats, 2 tbsp chia seeds, 200g full-fat Greek or plain yoghurt, 1 tsp cinnamon, 4 tbsp water. Mix well, then serve with a large handful of walnuts, and 1 tsp orange zest (optional).
DINNER
SPICY COURGETTE NOODLES WITH TOFU Serves 4
Preheat the oven to 200°C. Bake 400g of cubed tofu coated with 1 tbsp each of oil and cornflour on a lined tray for 25 mins, flipping halfway. Spiralise two courgettes, set aside. In a pan with 1 tbsp oil, fry 2cm fresh ginger and two garlic cloves, minced. Add three large carrots cut into half-moons, 350g green beans sliced, 350g mushrooms sliced, and one aubergine cubed.
