GREEN CURRY CHICKEN FILLETS

INGREDIENTS
4 chicken breasts 1 small red onion, chopped 5 cloves garlic, crushed 1 thumb-size ginger, crushed 1 bunch coriander, chopped handful of basil, chopped 1 lemon grass stalk, chopped 5 chillies, chopped 2T fresh lime juice 1T soy sauce 4T coconut cream 1tsp brown sugar ½tsp coriander ½tsp cumin 1T olive oil 1 onion, finely chopped 1 cup coconut cream Salt and freshly ground black pepper METHOD
1. In a food processor place red onion, garlic, ginger, coriander, basil, lemon grass, chillies, lime juice, soy sauce, coconut cream, coriander and cumin powder. Process to a smooth paste. Remove and set aside.
