SWEET PORK KEBABS
Serves: 4 Prep Time: 3 hrs 30 mins (including marinating)
Ingredients
750 g pork shoulder Salt and black pepper 1 tsp cayenne pepper 3 garlic cloves, crushed 1/2 lemon, juiced 1/2 cup yoghurt Bunch coriander, chopped Bunch mint, chopped Method
1. Cut pork into medium-sized cubes and place in a bowl. Season with salt, black pepper and cayenne pepper. Add garlic, lemon juice, yoghurt, coriander and mint and mix together.
2. Cover meat and place in a refrigerator to marinate for 2-3 hours. Place skewers in water for 30 minutes, remove, thread meat on and braai.
3. Serve with apricot and ginger chutney and coleslaw.
