QUINOA, FENNEL, AVOCADO AND BABY BUTTER LETTUCE

180g quinoa2 cups water200g baby fennel, trimmed and thinly sliced lengthways1 firm, ripe avocado, thinly sliced80g baby butter lettuce2T olive oil, for drizzling2T toasted sunflower seeds sunflower shoots, to garnish
For the dressing, whisk:
3T lemon juice1-2 cloves garlic, crushed8T olive oil1t honey or maple syrupsea salt and freshly ground black pepper
Instructions
1 Rinse the quinoa well under running water using a fine sieve, then drain well.
