PULLED PORK TACOS
■ Serves 4, prep 10 mins, cook 5 mins
WHAT YOU NEED
135g packet original taco shells (12)
1 red onion, halved, sliced
1 green capsicum, chopped
300g packaged pulled pork
300g jar chunky chipotle salsa
¾ cup water
½ cup fresh coriander leaves
1 cup grated cheddar cheese
1 avocado, chopped
Shredded iceberg lettuce and sour cream, to serve
1 Heat taco shells according to packet directions. Keep warm.
2 Heat an oiled, non-stick frying pan over a medium heat. Add onion and capsicum. Cook, stirring, for about 2 minutes, or until onion is soft. Stir in pork, ¾ cup of the salsa and water. Simmer, covered, for about 3 minutes, or until hot. Stir in coriander.
