Six years ago I was fortunate enough to trek the Inca Trail with Turia Pitt for charity. It was one of those pinch-yourself trips and for all of us on that tour, reaching Machu Picchu was a moment in time we’ll never forget. Musabaha (Chickpeas in Yoghurt-Tahini Sauce) SERVES 4 INGREDIENTS 800g tinned chickpeas 200ml water ¼ tbsp bicarbonate of soda 2 tbsp Greek yoghurt 6 tbsp tahini 3 garlic cloves, pressed Juice of 1 organic lemon Salt TO SERVE 1 tsp cumin powder 1 tsp paprika 25g cashew nuts, toasted 25g pine nuts, toasted Extra-virgin olive oil METHOD 1 In a small pan, boil the chickpeas in 2 their liquid, water and bicarbonate of soda for approximately 30 minutes.
